In Canada, I have found that one hole means it is a Salt dispenser and two holes mean that it is a Pepper dispenser. However, how does one know whether to use one dispenser or another when they both look alike?

In this case, you can look at the bottom of the dispenser. The clear glass shows that the one with white crystals is salt, the one with black crystals is pepper.
